Vinification and Maturing: The Chasselière undergoes vinification by plot in order to preserve the specificities of each plot, Mercurol, Pont-de-l’Isère, Beaumont-Monteux. This part of the vinification process is carried out in a truncated cone vat and barrels. The wine is then matured for 12 months in the same containers.
