Vinification and maturing: each year, this prestigious wine is harvested manually. Each plot is vinified separately, in order to preserve the typicality of the terroir. “Full” vinification is carried out, and the whole harvest is vinified in barrels, half of which are new and the other half, one year old. Finally, the wine is matured for 12 months in the same barrels.
