Vinification and Maturing: The Saint-Joseph Sainte Épine red vines are around 30 years of age, and grapes are hand-picked, respecting traditional methods. Saint-Joseph then undergoes vinification by plot, in barrels and truncated cone vats. The wine is matured for a year in the same containers.
