Food pairing: Doe steak with cranberries, ravioli gratin with Saint-Félicien
From the oldest vines of the estate located in the commune of Mercurol, 1840 vines have been selected, for its age, planted in 1946. Chalky-clay soil with lot of small pebbles located on the terraces of Mercurol. As our entire vineyard this vines are worked with eco-friendly methods in order to respect biodiversity and our beautiful landscapes.
The vines are harvested by hand in small cases in order to avoid crushing grapes. Once in the cellar, the harvest is placed in terracotta amphora for integral winemaking. Then wine is put in 228L barrels for ageing during 18 to 24 months. This wine is produced each year but not automatically bottle for its own. Indeed if the quality is too close to Terres d’Arce ones we prefer to add it to this cuvée.
Amphora offers all the purity of the fruit and the elegance of these old Syrah vines. Full bouquet of aromas with licorice (zan), blackberries, blueberries and blackcurrant. Full bodied wine withbright black fruit on the palate, ending by plenty of silky tannins. Ideally, serve at 18°.
